our CARTS volunteer bakers.

CARTS Cookie Recipe


BLEND IN A BIG BOWL:
4 eggs, beaten
2 tsp. vanilla
2 c. brown sugar
1 c. white sugar
BEAT IN:
2 c. melted butter (1lb) - not too hot

MIX AND ADD TO BIG BOWL:
2 c. rice crispies
2 c. rolled oats (can use 1 c. old fashioned and 1 c. quick)
1 c. raisins
2 c. chocolate chips
1 1/2 c. coconut

BLEND AND ADD:
4 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt

Let sit awhile for easier handling, if desired. Roll measured dough into balls (1/3 c. of dough). Place on pan and squish into patty.

Bake 350 degrees until golden (approx. 15 min; 13 min in convection oven). Often our friends have trouble with their teeth and prefer a softer cookie.

IMPORTANT! COOL THOROUGHLY BEFORE PACKAGING.

HELPFUL HINTS
Parchment paper helps the cookies bake better.
Let the cookies cool about a minute before moving carefully with a spatula to a cooling rack.
These cookies freeze very well, so can be made at your convenience.

Package cookies individually with packaging from CARTS (don't have supplies? Contact us) 
Please put the packaged cookies into the 2 long plastic bags provided.
